Canadian Duck with Red Wine
1 Cold roast duck -- cut serving pieces
2 tablespoons Butter
1 medium Onion -- chopped
2 tablespoons Flour
2 cups Condensed chicken consomme
Juice of 1 orange
Grated rind of 1 orange
1/4 cup Dry red wine
Salt -- to taste
Freshly-ground black pepper -- to taste
Melt butter and soften onion in it. Stir in the flour and brown it. Add consomme and simmer for 10 minutes. Add orange juice and grated rind, wine and duck pieces. Season to taste and simmer gently for 30 minutes.
