Wild Turkey Sausage

5 Feet small hog or sheep casings
4 lb Wild turkey meat
2 ts Salt
1 ts White pepper
1 ts Celery seed
1/2 ts Powdered bay leaf
2 ts Lemon zest
2 tb Chopped fresh parsley
1/8 ts Ground cloves
1/4 c Wild turkey Bourbon

Prepare casings. Mix remaining ingredients, grind through the fine disk and stuff into casings. Twist off into 3" links. Cook by sauteing in oil over medium heat until nicely browned and cooked through.
