Swiss Elk Steak

2 lb Elk steak
All-purpose flour
2 tb Butter or margarine
1 cn Tomato sauce -- 15 oz
1/2 c Red wine -- or beef broth
2 tb Worcestershire sauce
1/2 c Onion -- diced
1/2 c Green pepper -- diced
1 cn Ripe olives -- 2 1/4 oz sliced/drained
1 c Fresh mushrooms -- sliced
1/2 ts Salt
1/2 ts Pepper
4 sl Swiss cheese -- optional
Cooked noodles


Dredge elk steak lightly in flour; shake off excess. Melt butter in a large skillet; brown steak on both sides. Place in a shallow baking pan. Combine the next nine ingredients; pour over steak. Cover and bake at 350 deg. for 1-1/2 hours or until cooked to desired tenderness. If desired, place cheese over steak before serving. Serve over noodles. Yield: 4 servings
