5 Feet medium hog casings
4 lb Bison (buffalo) meat, with fat, cubed
1 lb Beef fat, cubed
2 ts Salt
2 cl Finely minced garlic
2 ts Finely minced shallots
1/2 ts Cayenne
2 ts Sweet paprika
Prepare casings. Grind the meat and fat together through the coarse disk. Add remaining ingredients and mix well. Grind through the fine disk twice. Stuff into casings, tie off into 3-4" links and cook as for any fresh sausage.
