Barbary Duck Salad

4 150 g; (5oz) barbary duck breast fillets

For The Marinade
3 tb Shoyu or soy sauce
2 Green chillies; de-seeded and finely chopped 2 1/2 Cm; (1inch) piece of fresh root ginger, peeled and grated
1 Orange; juice of
1 Garlic clove; crushed

To Serve
Mixed green salad leaves

Place the duck fillets in a shallow dish. Mix together the marinade ingredients and spoon over the duck.

Cover and marinate in the refrigerator for 12 hours, turning them occasionally.

Preheat the grill to high and grill the breasts for 4-5 minutes each side. Remove and discard the skin from the breasts and serve, either whole or cut in strips, on a bed of green salad.
