New England Holiday Goose
1 Wild goose - (6- to 8-lbs) -- cleaned
Prune Stuffing -- see * Note
Salt -- to taste
Freshly-ground black pepper -- to taste

Wash goose thoroughly and sprinkle inside well with salt and pepper. Stuff lightly and truss; prick skin well with a fork. Bake at 325 degrees, uncovered, for 2 3/4 to 3 hours, or until tender.
