Roast Goose with Baked Apples
8 lb Goose
2 c Bread crumbs
1 Onion; chopped
2 tb Fat
1/4 ts Sage
1 ts Salt
1/4 c Brown sugar
3 c Sweet potatoes; mashed
Cinnamon to taste
Nutmeg to taste
Cook goose giblets in salted water; cool and chop. Combine giblets, bread
crumbs, onion, fat, sage, salt and pepper; stuff goose with dressing.
Secure goose with skewers; place in baking pan. Bake for 15 minutes at 500
degrees. Reduce oven temperature to 350 degrees; bake for about 3 hours
longer or until tender. Core apples; sprinkle with brown sugar. Season
sweet potatoes with spices; stuff apples with sweet potato mixture. Place
stuffed apples on baking sheet. Bake at 325 degrees for about 25 minutes or until tender. Serve with goose.
