2 lb Turtle meat
1/4 c Butter
1 tb Dry mustard
1/4 ts Thyme
1/2 c Red wine
1 tb Salt
1 ts Pepper
1/4 ts Tabasco sauce
4 c Milk
Season turtle meat with salt and pepper. Heat butter and cook meat
slowly until tender and thoroughly browned. Add milk, thyme, mustard
and Tabasco sauce. Heat slowly to boiling point. Add wine and serve
immediately while pipping hot.
