Bison Steak

Bison steaks


Green Peppercorn Sauce:
2 tablespoons Butter
1/4 cup Chopped green onion
2 tablespoons Crushed peppercorns
1/4 cup White wine
1 cup Sour cream


Cook steak(s) quickly on medium heat, 6 minutes on each side. To retain more juices, reduce the chances of overcooking, have steaks slightly frozen when putting on the barbecue. Serve with Green Peppercorn Sauce.

Saute butter and green onion, add crushed peppercorns and white wine and simmer down to 1/2 the amount. Remove from burner and add sour cream. Blend and serve.
