Bison Steak Diane

4 Bison lion strip-steaks
3 teaspoons Lemon juice
1 tablespoon Chopped chives
3 ounces Butter
1 teaspoon Worcestershire sauce
1 teaspoon Mustard
Sliced fresh mushrooms - for garnish

Pound the steaks until 1/2-inch thick, season well and briefly pound again. Melt the butter in a pan and fry the steaks quickly over a high heat for 2 to 3 minutes each side, transfer to a hot serving dish. Put the remaining ingredients into the pan, bring to a boil, spoon over the steaks, garnish with sliced fried mushrooms, if desired.
This recipe yields 4 servings.
