Bison Stew

3 pounds Bison meat -- cubed
2 tablespoons Cooking oil
3 Onions -- chopped
6 Potatoes -- peeled, cubed
6 Carrots -- peeled, cubed
1 can Italian stewed tomatoes - (15 oz)
1 can Tomato sauce - (15 oz)
1/2 cup Water -- to 1 cup
1 tablespoon Cornstarch -- to 2 tbspns
1 cup Frozen green peas
Salt -- to taste
Freshly-ground black pepper -- to taste


Brown cubed bison meat in oil; add onions and saute. Add potatoes, carrots, stewed tomatoes, tomato sauce, pepper and part of the water. Bring to a boil, reduce heat, cover pan and simmer over very low heat for 1 1/2 to 2 hours. Adjust seasoning. If desired, add cornstarch mixed in water to thicken the mixture. Add peas 5 minutes before serving.
