1 x Rabbit
1 qt Water
4 tbl Salt
1/8 tsp Paprika
Freshly-ground black pepper to taste
1 pch Tarragon or to taste
1 pch Thyme or to taste
1 pch Sage or to taste
Soak rabbit for 1 hour in salted water. Rinse and dry meat well. Cut meat into parts to fry. Coat each piece with mixture of flour, paprika, pepper, tarragon, thyme and sage. Fry rabbit in oil until golden-brown.
