Roast Beaver Tail (young beaver)

1 Beaver tail -- skinned
Salt -- to taste
Freshly-ground black pepper -- to taste
Minced onions -- as needed
Bacon slices -- as needed

Put the skinned tail in a roasting pan, season well with salt and pepper, and top with a thin layer of minced onions. Lard top with slices of bacon and roast at 350 degrees until tender.
