3 pounds Fat-free bear roast - (to 4 lbs) -- marinated (perhaps in Cooked Marinade) -- see * Note
2 tablespoons Honey
1 teaspoon Ground cinnamon
1 teaspoon Garlic juice
1 teaspoon Ground ginger
2 cups Strained marinade
1/4 pound Butter
* Note: See the "Cooked Marinade" recipe which is included in this collection.
Wipe the meat dry and rub with mixture of honey, cinnamon, garlic juice, and ginger. Put in a roaster on a rack and dot with butter and baste with marinade every 30 minutes. Roast at 325 degrees for 3 hours. If in a self-basting roaster, uncover for the last 30 minutes.
This recipe yields 8 to 10 servings.
