Pennsylvania Roast Bear

1 x Young black bear haunch all fat removed, and wiped dry
Salt to taste
Freshly-ground black pepper to taste
Butter as needed
Mild mustard as needed
Flour as needed


Dust well with salt and pepper, brush with melted butter. Spread with mild, prepared mustard, and coat with flour. Roast slowly at 300 degrees, uncovered, for about 4 hours.
