Pennsylvania Roast Beaver

1 x Young beaver prepared for baking
Baking soda as needed
Freshly-ground black pepper as needed
Salt as needed
Onions sliced
Salt pork or bacon strips as needed

Parboil beaver gently for 10 minutes in water, with 1 teaspoon baking soda and 1 teaspoon black pepper to each quart of water; drain. Put meat in roasting pan. Sprinkle with salt and pepper inside and out. Cover with sliced onions and strips of salt pork or bacon. Roast at 350 degrees until the meat almost falls off the bones.
