Roast Partridge With Raisins

2 whl Partridge
1 cup White bread crumbs
11/2 cup Scalded milk seasoned with 1/2 tsp Salt and 1/4 tsp Freshly-ground white pepper
4 tbl Butter melted
1 cup Seedless raisins
1/2 cup Flour seasoned with 1 tsp Salt and 1/4 tsp Freshly-ground black pepper
4 slc Bacon

Plump raisins by soaking in hot water 10 to 15 minutes; drain. Soak crumbs briefly in milk and squeeze until only moist. Add melted butter and blend in raisins. Stuff birds with this mix and truss. Dust with seasoned flour, top with bacon and roast at 325 degrees for 1 hour, basting every 5 minutes for the last 20 minutes.

This recipe yields 4 servings.
