Allegheny Marsh Hare Loaf

1 1/2 lb Muskrat
2 x Eggs beaten
1 cup Evaporated milk
1/3 cup Fine dry bread crumbs
1/4 x Onion grated
1/4 tsp Dried thyme
1 tsp Salt
1/4 tsp Freshly-ground black pepper
1 tsp Worcestershire sauce


Soak muskrat as described in Muskrat - Basic Information (included in this collection), then drain, bone, and grind once. Mix all ingredients together as for standard meat loaf. Put in a loaf pan, then set the pan in another pan of water. Bake at 350 degrees for 1 1/2 to 2 hours.

This recipe yields 6 servings.
